Mini chocolate brandy fruit cake

Here is my mini fruit cake recipe.

500grams of dried fruit and nuts (raisins, prunes, dates, glazed cherries, citrus peel and walnuts)
1/2 cup expresso coffee
1/2 cup of brandy
80 grams dark chocolate
1 tablespoon of butter
1 tablespoon of cream
1 cup of self raising flour
Pinch of nutmeg

In a microwave bowl heat on high the dried fruit, brandy, coffee, butter and chocolate. Once hot give it a good stir.

Fold in flour and nutmeg.

Pour into mini baking dishes that have been greased with butter and flour.

Bake in a moderate oven, mini loaf for 20 minutes and mini cake tin for 30 minutes.

Cool in a wire rack.





Really tasty if you like rum and raisin chocolate flavour.
