Here is a quick and easy pudding.
1 cup of SR flour
1 cup of almond meal
1/4 cup cocoa
1 & 1/4 cup brown sugar
150g melted butter
1 cup milk
Whisk all ingredients together.
Bake as a whole pudding for 40 minutes at 180 degrees or bake in silicon cupcake holders for 15 minutes.
Make 18 mini puddings that can be heated up in the microwave individually for 20 seconds.
These are crunchy on the outside and gooey in the middle.
You can use any sauce eg carmel or raspberry, orange glaze or double cream.
