After completing the lemon butter I needed to continue with the theme and try my hand at passionfruit butter.
Using the same cooking technique for the lemon butter. The recipe I found on the web and created my own twist by adding the juice from the lemon because I like my passionfruit butter a little tangy. Next time I might add the zest and juice from the lemon.
The sole reason that I made this passionfruit butter was to use it as a spread for my fruit cake, more about that later.
2 cups of caster sugar
250 grams of unsalted butter
1 lemon (juice only)
