Strawberry and cream muffins

On the weekend I made 36 cupcakes and muffins.
To be honest there was 37 cupcakes and the children ate two, so we only had 35 cupcakes to donate.
Here is a new recipe that I tried:
strawberry and cream muffins
310g self raising flour
60grams caster sugar
2 teaspoons baking powder
2 eggs, beaten
375mls milk
160grams butter, melted
preheat the oven to 210c.  Lightly grease a 12 hold muffin tin.
sift the flour, sugar and baking powder into a mixing bowl.  Make a well in the centre.  Place the egg,milk and melted butter in a seperate bolw.  Combine and add all at once to the flour mixture
Stir gently with a fork.  Do not over mix, the batter should look lumpy.
Sppon the mixture evenly into the prepared in.  Bake for 20 – 25 minutes or golden brown. 
Cut out a circle from the top of each muffin and fill with strawberry jam and a dollop of double cream.  Cut the top in half and arrange like fairy wings.
These turned out fantastic!  I wish I had more time to dust them with powered sugar or maybe sprinkles.
My local store didn’t have any dollop cream or double cream, so I whipped up some fluffy cream with a little bit of powered sugar.

There was also a big batch of double chocolate cupcakes, with chocolate icing. Does that make it triple chocolate?
We needed to fill out cupcake carrier.
Because the P&C Association was having another sausage sizzle to raise money for the school camp.

Here is our little stand selling cakes, biscuits that the children made in class and sausage in bread.
I love how our small community works together.
