This is a Minestrone Con Bruschetta Soup that I got off Pip’s blog, Meet Me at Mikes.
Here is my version:
4 tbsp olive oil
1 finely diced onion
1 finely diced carrot
1 finely diced celery stick
2 finely diced zuccini
4 small potatoes, diced finely
20 green beans sliced finely
tin of chopped organic tomatoes
2 litres of quality chicken stock
paprika
salt & pepper
Method
saute the onion, carrot and celery in olive oil in a frying pan
transfer sauted vegetables into the slow cooker
add the other vegetables and stock into the slow cooker
add paprika and pepper
leave in the slow cooker on low for 4 – 6 hours
season with salt
Serve with buttered bread.
